Making Pesto

 

 

The basil is ready for me to make pesto. It’s so easy and it lasts us all year.

 

 

 

 

Pick 3-4 cups of basil leaves.

 

 

 

 

Wash well, making sure you get rid of any bugs 🙂

 

 

 

 

Dry and place in food processor.

 

 

 

 

Add parmesan cheese

 

 

 

 

Add walnuts

 

 

 

 

Add garlic

 

 

 

 

Add olive oil while the motor is running

 

 

 

 

3/4 fill jars or pots

 

 

 

 

Top up with extra olive oil – very important for stopping oxidation

 

 

 

 

I usually freeze it in little plastic pots so it lasts all year

 

 

Ingredients:

3-4 cups firmly packed basil leaves

1/3c grated parmesan cheese

1/3c toasted walnuts

3 cloves garlic

good pinch salt

125ml olive oil, plus extra
